Elise Desaulniers, French Canadian scholar, animal rights activist, and author of Cash Cow: Ten Myths about the Dairy Industry, an impeccably researched and yet infinitely readable short book that answers every question about why vegans don’t consume dairy and the reasons why this needs to become a universal trend. She’s a native French speaker who used the most poignant English phrase to describe what it takes to produce cow’s milk for human consumption: “long pain.”
